Dark Chocolate Banana Bites


Bananas and dark chocolate are a match made in creamy, smoky heaven. The combination is great for dessert, an afternoon snack, or a pre-workout out energizer. Trader Joe's has ready made bags of chocolate covered banana slices in the freezer section, but at $3 to $4 a bag, the product is a bit overpriced. It's easy and inexpensive to make at home AND the flavor can be customized. Depending on my mood, I like to eat the frozen banana slices with protein rich crunchy almond butter, blood sugar stabilizing cinnamon, or spicy cayenne pepper. Using one banana, half a bar of dark chocolate, and spices, I made a weeks worth of tasty treats.

Dark Chocolate Banana Bites Four Ways

1 Ripe Banana, sliced into approx. 16 coins
2 oz dark chocolate, broken into pieces
4 tsp crunchy almond butter
1 tsp cayenne pepper
1 tsp cinnamon

Lay the banana slices in rows of four on a sheet of wax paper. Top one row with almond butter, another with cinnamon, and a third row cayenne pepper. The fourth row can be left plain. 

In a small glass bowl, microwave the chocolate for 30 seconds. Stir. Microwave the chocolate for another 30 seconds. Stir until no chunks remain. If needed, continue microwaving in 10 second intervals. 

Use a fork or chopsticks to dip each banana slice in the melted chocolate. Return the covered banana slice to the wax paper. Save the cayenne pepper seasoned slices for last to avoid flavor mixing. Top the cinnamon and cayenne banana slices with their respective spice. 

Freeze the bananas overnight and then store in a Ziploc bag or storage container in the freezer.
