Crunchy Tomato Cucumber Salad

One of my least favorite aspects about living in Philadelphia is the weather. During shifts in seasons, the weather becomes especially erratic. Monday we woke up to temperatures around 30 degrees Fahrenheit and today it is 80 degrees and humid. I'm not a fan of the heat and even less so of humidity. To beat the heat today, I'm sticking to "cooling foods" like berries, bananas, and greens. Cucumbers are another favorite cooling food for me. I like the crisp, hydrating veggie by itself and with a hearty dose of tart vinegar. Adding dehydrated tomatoes heightens the crunch factor and adds more flavor. The key is to purchase/make the tomatoes that are packaged dry, without water or oil. My favorite salad recipe including all three ingredients is below.

Crunchy Tomato Cucumber Salad
Serves 1-2

1 greenhouse cucumber, sliced then halved
2 tsp lemon olive oil
1 Tbsp rice vinegar (regular or red wine vinegar would also work here)
1 tsp garlic powder
5 dehydrated tomatoes, broken into pieces
Salt & pepper to taste

In a large bowl, combine all of the ingredients except for the dehydrated tomatoes. Add the pieces of tomato just before serving.
