Vegan Coleslaw


Coleslaw is one of those side dishes made for summer. Crispy, flavorful, and as a cold side, it's refreshing when temps soar. Here's a vegan version that is picnic ready.

Vegan Coleslaw
Serves 3

1/2 bag shredded coleslaw mix (cabbage and carrots)
2 Tbsp Vegan mayo
2 tsp Apple cider vinegar
1 Tbsp Chives, chopped
1 tsp Coriander
1/4 tsp each Garlic salt & pepper

In a serving bowl, whisk together the mayo, vinegar, chives, coriander, and salt and pepper. It will be chunky when the mayo first starts to separate, but continue whisking until the consistency is smooth. Top with the coleslaw mix (or fresh shredded cabbage and carrots) and stir to combine. Allow to rest for roughly 30 minutes to allow the flavors to meld. Then enjoy! We served ours with fish tacos :D
