Salsa Tofu


Hungry and don't feel like cooking an elaborate meal? Here's a meal that packs a flavorful punch and comes together in in under ten minutes.

Salsa Tofu
Serves One

1 cup cooked brown rice
1 Tbsp oil (grapeseed, olive oil, etc)
7 oz (1/2 standard package) tofu, cubed
1/2 cup fresh salsa (I used a salsa verde, but any fresh salsa or pico de gallo would do)
1/4 cup shredded mozzarella (or whatever mild cheese you have on hand)

Heat the oil in a skillet over medium heat. Add the cubed tofu and cook for three minutes, turning once. Meanwhile microwave the rice if needed. Shut off the stove burner below the tofu. Stir in the salsa. Pour the salsa tofu mixture over the rice. Top with cheese and enjoy :)
